Freshly roasted coffee releases CO2, so a one-way degassing valve lets gas escape without letting oxygen in — keeping coffee fresher and stopping bags swelling. We recommend a valve for beans packed soon after roasting. Fully degassed coffee and non-coffee products often don't need one.
